I had never heard of the Protein Bread Co before, let alone their Savoury Muffin Mix. However, both are definitely now on my ‘to try’ list!
A reader gave the muffins a go and kindly sent through their photos and serving suggestions to share.

Savoury Muffins (reader submission)
Grease the muffin pan with butter
Empty the packet of Savoury Muffin Mix into a large mixing bowl and make a well in the centre
Fry the diced onion, capsicum and garlic
In another mixing bowl, combine the eggs, milk, onion, capsicum, garlic and veggie stock
Add the egg mixture into the muffin mix and gently fold to combine
Add the grated zucchini and cheese into the mix and gently fold through to combine
Portion the mixture evenly into the 12 muffin tins for large muffins (I made medium sized muffins that were still big enough, but stretched the mix to make 16)
Place in the preheated oven and bake for 20-25 minutes or until golden brown on top (fan-forced 20 mins worked for me)
Once done, place the muffins on a cooling rack for 5-10 minutes
They are good by themselves, but decadent with some butter or cream cheese!
