Chicken & Bacon Pot Pies

About two years ago I found this great recipe for Chicken & Bacon Pot Pies and then about one month later I promptly lost it (don’t tell Bryan, he’s forever frustrated with my lack of tidiness).

I thought it was gone for good in one of my spontaneous clean outs.

But just last week I uncovered it again! YAY!

Guess where it was? In my recipe book. Where it should have been. Where I had looked for it countless times. I blame the fairies.

Anyway, I found the recipe and I was MAJORLY disappointed. I remembered it being a recipe for Chicken & Bacon Pot Pies but this…thing…had fennel, cardamom and totally gross star anise. I would never use star anise. Aniseed has NO place in my kitchen, thankyouverymuch.

The other two I can use in very small quantities but I usually omit them entirely.

So what the hell was going on? Was I having a total brain fart with this recipe?

…thinking…thinking…brain fart…thinking…thinking…cogs turning…aha!

The usual. I had only used this recipe as a thought-starter. The comprehension was dawning. How I’d changed it was starting to come back to me. And if memory serves me correctly, my most recent version last Friday night was the best one yet.

So here it is, before I lose it again. Or forget it again. Or just have another brain fart…

Instructions
  1. Saute the shallots and mustard in the oil until aromatic.
  2. Add the wine and stock and reduce until most of the liquid has evaporated.
  3. Add the veggies and saute until tender.
  4. Add the chicken and bacon and stir until warmed through (if you're starting with raw chook, cook it off first), then stir through the sour cream.
  5. Divide into bowls.
  6. Top with the cauliflower mash.
  7. Add your cheese of choice.
  8. Bake until cheese is beginning to brown (you can see that my bowl was under the hot spot!)
Recipe Notes

The Cauliflower Mash recipe is here if you need a refresher.

You could totally use other veg too - I just threw in what we had in the fridge.
