About two years ago I found this great recipe for Chicken & Bacon Pot Pies and then about one month later I promptly lost it (don’t tell Bryan, he’s forever frustrated with my lack of tidiness).
I thought it was gone for good in one of my spontaneous clean outs.
But just last week I uncovered it again! YAY!
Guess where it was? In my recipe book. Where it should have been. Where I had looked for it countless times. I blame the fairies.
Anyway, I found the recipe and I was MAJORLY disappointed. I remembered it being a recipe for Chicken & Bacon Pot Pies but this…thing…had fennel, cardamom and totally gross star anise. I would never use star anise. Aniseed has NO place in my kitchen, thankyouverymuch.
The other two I can use in very small quantities but I usually omit them entirely.
So what the hell was going on? Was I having a total brain fart with this recipe?
…thinking…thinking…brain fart…thinking…thinking…cogs turning…aha!
The usual. I had only used this recipe as a thought-starter. The comprehension was dawning. How I’d changed it was starting to come back to me. And if memory serves me correctly, my most recent version last Friday night was the best one yet.
So here it is, before I lose it again. Or forget it again. Or just have another brain fart…
